Microgreens are small edible plants known as ‘seed-leaf’ or cotyledon stage of maturity. Microgreens aren't just tasty toppings or garnishes for soups, salads and sandwiches. They're also healthful. According to results of the Agricultural Research Service (ARS)-led study. One major limitation to the growth of the microgreen industry is the rapid quality deterioration that occurs soon after harvest, which keeps prices high and restricts commerce to local sales. Greens that have been harvested easily dehydrate, wilt, and decay. Best to always store them in our container they came in during purchase (which helps with moisture control) and in refrigeration to ensure a longer shelf life, usually one to several weeks from harvest purchase date.
